eat in: brunch in your pyjamas

With all of May’s bank holidays, you can forget the midweek hustle. Guaranteed not to have you dropping marmalade onto your paper or gulping down your coffee as you grab your keys, these easy ideas are all you need for a fabulous, luxurious brunch in your pyjamas.

Scrambled Eggs with Chorizo. For a continental thrill, whisk together eggs, a glug of cream, some chopped herbs and a pinch of salt and pepper. Fry some chorizo until slightly brown, then add the egg mixture and stir occasionally with a wooden spoon until ready.

Eggs Benedict. Top two toasted halves of an English muffin with a generous lather of hollandaise sauce, add to each a slice of ham and a poached egg – then spoon on lashings more sauce. Perfect for the morning after the night before.

French Toast with Blueberry Compote. For a sweet tooth, dip bread into a mixture of eggs, milk, sugar and vanilla extract until it’s generously coated. While it’s frying to a golden brown, heat a handful of blueberries in a pan with a tablespoon of caster sugar and lemon juice until they start to pop. Serve with a greedy scoop of vanilla ice cream.
