eat now: beetroot cake

Believe it or not, there are some reasons to be grateful summer is so brief, one being that bikini season is short and sweet. So to celebrate the end of constant calorie counting and the start of cosy fires, cups of tea and guilt-free biscuit breaks, we’ve found a delicious recipe for beetroot cake, courtesy of the Tiger in a Jar video blog…

225g butter
300g dark brown sugar
3 eggs
4 squares semi-sweet chocolate
400g pure cooked beetroot
1 tsp vanilla extract
250g plain flour
2 tsp baking soda
¼ tsp salt
Icing sugar

Cream 170g butter with all the sugar in a mixing bowl. Add the eggs; mix well. Melt the chocolate with the remaining butter; stir until smooth. Cool slightly. Blend the chocolate mixture, beetroot and vanilla into the creamed mixture (mixture will appear separated). Mix together the flour, baking soda and salt; add to the creamed mixture and mix well. Pour into a 9-inch cake pan. Bake at 180C for 40 minutes or until an inserted toothpick comes out clean. Cool in the pan before removing to wire rack to cool completely. Dust with icing sugar before serving.

I know not everyone's a beetroot fan, but if you are I can promise the cake is delicious and, even if you're not, you should at least watch the video of the cake being made. It's very cool.
