I'm not much of a drinker. My tastebuds didn't really develop much past the age of eight, so I've never 'acquired' a liking for wine or beer, or even coffee or tea for that matter. But I have a sweet tooth and I do like an occasional fruit-based cocktail, preferably one where you can't taste the alcohol.
I found this recipe in an Australian magazine (estmagazine.com) and, since it's by my great friend Chyka (who runs one of Australia's biggest catering companies and is insanely good at making things look nice and taste nice!) and since we have a pomegranate theme with our new home fragrance range, I thought she wouldn't mind if I shared it.
Pomegranate and Tahitian lime syrup is added to Havana Club white rum and club soda then garnished with pomegranate seeds and fresh mint for a delicious take on the classic mojito.
1/4 cup fresh pomegranate juice
1 tbsp granulated sugar
1 tbsp fresh lime juice
10 mint leaves
30ml white rum
1. Combine all ingredients in a cocktail shaker with a hand full of ice cubes and shake.
2. Fill two cocktail glasses with crushed ice, fresh mint leaves and pomegranate seeds.
3. Divide mixed mojitos between the two glasses.
4. Top with a splash of soda water and fresh lime.
