Cocktail connoisseur and recent hush meets Shannon Tebay shares her favourite festive recipes

Recently, we caught up with expert bartender and beverage director of London’s Outernet Live group, Shannon Tebay. The latest in our hush meets series, we chatted (over a cocktail or two) about her rise to fame in the mixology world and her beverage of choice, among other things. But, we couldn’t leave The Lower Third (Shannon’s latest venture) without asking her for the recipes to some delicious festive cocktails. These are guaranteed to go down a treat with your guests; a whiskey-based winter warmer, a refreshing rhubarb spritz and, the one we’re most excited about, her bespoke hush cocktail – a bright and zingy champagne cocktail with a spicy twist!

Nothing says celebration more than a bright, fizzy, champagne drink, and the hush cocktail is the perfect offering for your guests when you’re looking to bring some fun to the party. Pair it with the seasonal flavours of spiced apple and cranberry, and you've got the perfect festive drink to share with friends and loved ones. Complete with a splash of berry-pink, this wintertime tipple is evocative not just of the festive season, but of hush as a brand!

Serves 2

I N G R E D I E N T S

40ml Avallen calvados
40ml cranberry juice
20ml Cointreau
30ml cinnamon syrup
30ml fresh lemon juice
1 dash Peychaud bitters
Champagne 
Lemon twist to garnish

M E T H O D

1.   Add the Peychaud bitters, lemon juice, cinnamon syrup, cranberry juice, Coitreau and calvados to a cocktail shaker with a scoopful of ice

2.   Shake until mixed and strain into a champagne flute

3.   Top with champagne

4.   Garnish with a twist of lemon peel

Whiskey, pear, and a whisper of smoke come together in this slow-sipping winter warmer. The Hunky Dory is the perfect drink to enjoy cuddled up next to the fireplace with a pal, sweetheart, or even a good book.

I N G R E D I E N T S

45ml Jack Daniels
15ml Poire Williams
7.5ml William Fox eucalyptus syrup
5ml (1 tsp) Caol Ila Single Malt Scotch
1 dash Angostura bitters
1 dash absinthe
Orange twist to garnish

M E T H O D

1.    Add the Jack Daniels, Poire Williams, eucalyptus syrup, Scotch, Angostura bitters and absinthe to a jug and stir with a cocktail spoon

2.    Prepare a short whiskey glass with a block of ice

3.    Pour in the cocktail and garnish with a twist of orange peel

Deep, earthy rhubarb sings in this recipe designed for fans of a slightly bitter, refreshing spritz. If you find yourself in the mood for something deliciously sweet with a wintry edge, the One Trick Pony will slip down a treat this festive season.

60ml Belsazar Rose
30ml Sipello Apertivo
15ml Giffard rhubarb liqueur
60ml sparkling wine 
30ml sparkling water

M E T H O D

1.   Prepare a wine glass with a handful of ice cubes

2.   Add the Belsazar Rose, Sipello Apertivo, rhubarb liqueur, sparkling wine and sparkling water

3.   Stir in the glass with a cocktail spoon

4.   Garnish with a slice of grapefruit
