One of my closest friends in Australia Chyka just so happens to be a ridiculously talented cook and caterer. She and her husband Bruce own Australia's finest (no, I'm not biased) catering company - The Big Group.
Not surprisingly even the most casual meal at their place is extraordinary. Barbecues in their backyard are one of my favourite ways to spend a day - sipping Pimm’s, laughing at one of Bruce's stories and enjoying food that looks way too good to eat.
One staple at every BBQ is this delicious Spinach Dip.
3 packets of frozen spinach, thawed
600g tinned water chestnuts, chopped
1 bunch spring onions
1 carton vegetable soup
3 cups sour cream
1 cup mayonnaise
Drain spinach and put in a bowl. Chop the water chestnuts and spring onions and add to the spinach. Mix all the ingredients together. It's that simple...
